Banana & Choc Chip Loaf

It took a few years, but eventually I began to love the Banana. I had always loved banana milkshakes and those little foam banana sweets, man I ate a lot of them!


They started giving free banana's away at work, amongst other fruits, so I thought I had better get involved. I do like to collect them up, let them go mushy - mainly because I forget I had saved them - and then make some Banana Bread. It took a while to find the right recipe but I have struggled through making many loafs to get here...

Ingredients. Use a 900g Loaf Tin


100g Butter, softened. Or Baking Spread

175g Golden Caster Sugar

2 Eggs

2 Ripe Bananas, riper the better

225g Self-Raising Flour

1 tsp Baking Powder

1 tbsp Ground Cinnamon

1 tbsp Milk

200g Chocolate Chips


Method

  

1. Lightly grease the loaf tin and line it with non-stick baking parchment. Pre-heat the oven to 160º no fan

2. Using an elctric hand whisk, beat the butter and sugar until smooth and fluffy. Add in the banana and beat again. It will look a little unpleasant, but soldier on

3. Add the eggs one at a time with a spoonful of flour and beat to combine. Add the rest of the flour with the baking powder and cinnamon. Stir through the chocolate chips

4.If the mixture is looking a little thick, add a tbsp of milk to loosen

5. Pour into the prepared loaf tine and bake for 50-55 minutes. Check after 40 minutes and cover with tin foil if the top is browning too quickly

6. Remove from the oven and leave the cake to cool in the tin for a few minutes before moving to a wire rack to cool completely

7. Slice thickly and enjoy. Can be smothered in butter. Like most things.
